Vegetable Pulao


Basmati rice – 1 cup
Water – 1 and 1/4cup
coconut milk- 1/4 cup
Carrots chopped -2 medium size
Beans chopped -5
Peas -1/4 cup
Onion chopped -1
Lemon juice-1 spoon
Ginger garlic paste – 2spoons
Mint leaves – few
Green chillies – 2
Garam masala powder -1/2 spoon
Cloves – 2
Cinnamom – 1/2 inch
Cardamom – 1
Bayleaf – 1
Ghee – 2spoon
Oil – 2 spoons


Add some water into the rice add soak it 20 minutes.Heat oil and ghee in a cooker. Add,cloves,cardamom,bay leaf one by one,then saute it for few seconds.Add ginger garlic paste, green chilly,onion,mint leaves saute it till its turns to golden brown color.Add vegetables,garam masala and salt cook it 2 minutes.Strain the water from rice and add it, then add lemon juice ,coconut milk and water.Close the pressure cook and wait for 2 whistle.After pressure release serve it hot with onion raita or your favorite sauce.
