Ingredients: - Rice-1 cup, toor dhall-1/2 cup,tamarind pulp-3
table spooons,coconut-1/2(grated), red chillies-10, cumin seeds-1 tspn, small
onions-6, garlic cloves-6, drumstick-1, brinjal-150 grams, carrot-200 grams,
beans-150 gms,raw banana-1, potato-1,small onions-25.
Preparation time : -45 minutes
HOW TO PREPARE: -Wash dhall and rice seperately and soak for 1/2 an hour.
Take a pressure cooker add some water and dhall and allow it to boil. Add some
turmeric powder and a tspn of oil. Take a blender and add coconut, cumin seeds,
onion, garlic, red chillies. Grind them together to a coarse paste.
When the dhall is half cooked add vegetables like drumstick, carrot and
beans.Allow them to cook for 5 mins and then add brinjal, raw banana and
potato.Let them get cooked for 10 mins.
Now add the soaked rice, grinded paste and tamarind pulp. Add required
amount of salt. In a seperate pan, pour some gingelly oil, add mustard
seeds, urid dhall, curry leaves, asafoetida powder, small onions and fry
for sometime. Add this to the rice, dhall, vegetables mixture. Mix
everything thoroughly and in a low flame cook it by covering with a lid.(no
need to put the whistle). Once in a while open the lid and mis them from
the bottom of the cooker so that it will not stick to the bottom. Serve hot
with onion raitha, papads.
Ingredients : -200 gms Bengal Gram powder, 200 gms Sugar (powder), 200 gms Ghee, 10 gms Kismis, 1/2
tsp Cardamom powder.
Preparation time : - 10 minutes + setting time
HOW TO PREPARE : - Heat
the ghee and cook the besan on medium flame till the raw smell disappears.
Make sure the colour of the besan does not change. Add the sugar and turn.
Remove from fire. Mix in the kismis and cardamom powder.
Spread out on an inverted greased plate. When firm cut into squares. Besan ki burfi
is ready to be eaten.
Ingredients :-Rice 250 gms; Thoor Dal 250 gms; Gram Dhal 25 gms; Udad Dhal 60 gms; Red Chilly 15
gms; Coriander (Dhania) seeds 15 gms; Cinnamon 5 gms; Clove 2-3 nos;Pepper 5
gms;Cardamon 2 nos; Dry Copra 20 gms; Tamarind 10 gms; Jaggery 10 gms; Vegetable:
Sweet Pumkin,Raw Banana, Cluster of Beans, Coconut - 1/2 kg.
Preparation time : -30 to 40 minutes
HOW TO PREPARE : -Cook Thoor Dhal till half done. Add Vegetables, rice and
cook till well done. Fry remaining ingredients with a little oil and grind with
coconut to a coarse paste (not too fine). Mic this to the cooked rice & dhal along
with tamarind pulp & jaggery. Add salt to taste. Stir and blend till it boils once
or twice.
Garnish with mustard, curry leaves and 2-3 red chillies. Server with ghee.
