Egg khesh | Pattani Mutai curry | Special mutai

Ingredients: - 4 eggs, 1 capsicum, 1 onion, 1 potato, 6 button mushrooms, 2 tablespoons oil and salt and pepper to taste.

Preparation time : - 20 minutes     Serves : - 2

HOW TO PREPARE: - Finely slice the onions, capsicum and mushrooms and keep it aside. Peel the potato and cut it into roundels. Take a bowl and add the eggs and beat till it's nice and fluffy. Take a frying pan and heat the oil. When the oil is very hot add the onions, capsicum, potato and mushrooms each separately. While frying fry on a high flame and sprinkle a little water to avoid roasting them. If fried properly the colour of the vegetables will not change. Now add pepper and salt to the beaten eggs and beat it once more. Take a casserole or an oven proof glass bowl and smear it with oil all over. Now lay in a layer of capsicum. Then put a layer of potatoes over it. Next layer it with the mushrooms and then the onions. Now pour the eggs over this as the last layer. Sprinkle pepper and salt and then cook in a preheated oven till the eggs are done. Remove from the oven and while serving put the spoon right in so that you get all the layers while serving. Serve with bread or stuff it into chapattis.



Ingredients : - 5 eggs hard boiled, ¾ cup peas, 3 onions, 3 green chillies, 2 tomatoes, 6 garlic flakes, 1 inch cinnamon, 2 cardamoms, 2 cloves, 1 bay leaf, 4 tablespoons oil and salt to taste.

Preparation time :- 10 minutes     Serves : - 2

HOW TO PREPARE : - Finely chop the onions, tomatoes and green chillies each separately and keep it aside. Now cut the boiled eggs into halves and keep that aside too. Take a frying pan and heat up the oil. When the oil is nice and hot add the cloves, cinnamon, cardamom, bay leaf, green chillies and crushed garlic and sauté for a minute. When the aroma begins to rise add the onions and sauté till golden brown. Now put in the tomato and peas and cook till the peas are soft and the oil begins to leave the edges of the pan. Now add the eggs and cook for a minute. Be very cautious while stirring so that you don't break the eggs. Remove from flame and garnish with chopped coriander and serve.



Ingredients : - 3 eggs hard boiled, 1 big onion, 1 small tomato, ¾ tablespoon chopped coriander leaves, 2 tablespoons Bengal gram flour, 1 teaspoon chilly powder, 1 ½ teaspoon coriander powder, 1 pinch turmeric, 1 teaspoon cumin powder, ¾ teaspoon garam masala(hot spice mix), 2 tablespoons oil and salt to taste.

Preparation time : - 12 minutes     Serves : - 2

HOW TO PREPARE : - Make slits on all side of the egg and keep it aside. Finely chop the onion and tomato each separately. Now take a small bowl and add all the spices. Pour in a teaspoon or t6wo of water and mix all the spices to make a nice paste. Now take a pan and heat the oil. When the oil is very hot add the onions and fry till they are a deep brown. Put in the gram flour and sauté till the gram flour is well fried and browned. Add the freshly made masala paste and fry till the raw smell leaves and an aroma begins to rise. Put in the tomato, coriander leaves and eggs and mix gently. Pour in one cup water and stir without breaking the eggs. Let it boil, then cover, simmer and cook for another five minutes. Remove from flame and garnish with fried cashew nuts and butter flakes and serve.
