Indian Cooking is not a rocket science

The diversity of Indian cooking is not understood by people of the world over. They only understand Indian cooking with the term “curry”. Though, curry is backbone of Indian cooking, it is not the only thing in Indian cooking. There are many dishes that are the basis of Indian cooking. Along with curry there are many other dishes that form an integral part of Indian cooking. The curry also varies from family to family and from region to region. In curry many families still make their own curry powder about which they don’t tell anyone. The method and ingredients of making curry powder differs from each and every family. There are even secret recipes for the curry powders and other spices used in cooking Indian food. The different curry powders give their unique flavor and characteristic to the dish

In North India the main ingredients that are used in most of the dishes are chilies, milk, saffron, cottage cheese and clarified butter. In South India the popular ingredients used for cooking the dishes are coconut, pepper, tamarind and coconut oil. In eastern Indian the favorite spice is mustard and fish is the favorite dish of this region.

The dishes cooked in a simple meal are easy to cook, but during the festivals the dishes that are cooked are very complicated. There are special dishes for the festivals. And certain items are necessary to be prepared as they are considered auspicious, while many dishes are taboo. Non- vegetarian food is specially banned during festivals and everyone avoids non-vegetarian food during festivals.

The daily Indian food is a sit down affair with two to three main course dishes. Though Indians are supposed to be vegetarians, there is a vast variety of Indian Non-vegetarian dishes too that are very popular. The Indian meal is rich, but if had in moderation, it won’t harm you or your waistline
