3 Big Aloo, 3 Baingan , 1 Big Onion, 3 Cloves garlic, 4 pcs Green Chillies,1/4 tsp Fenugreek, 4 tblsp oil, 5 tblsp Baba’s fish masala and 6 pcs curry leaves.
HOW TO PREPARE
Wash all the vegetables and keep aside. Peel the aloos and cut into cubes. Cut baingan into 4 pcs and sliced it 1cm thick and soak in water to avoid changing color. Peel and sliced the oinons, garlics and green chillies.. Heat the oil in a frying pan and add in fenugreek seeds and stir fry till it turns dark brown, then add in the sliced ingredients and stir fry for 2 mins. Add the aloo ,baingan and stir fry for 1 min, lower the heat to the maximum and add the salt and fish masala but do not stir. Cover with the lid and leave it for 5 mins. Open the lid and stir fry till 2mins or till the liquid is dry and serve hot with chappati or with rice and dal. Serves for 4 person.
